Simple Italian style potatoes with zuchinni;

I really believe It is important to master the basics of cooking, to have a collection of recipes that can be prepared quickly and easily with readily available ingredients; Potatoes are a staple ingredient which can be cooked in a multitude of different ways, as an accompaniment to Meat, Fish or Eggs, I have written several posts with potatoes as the main ingredient; for example Potatoes with PeppersPotatoes with Garlic & rosemary; I will continue with a series of posts on vegetable accompaniments, as they are just as important, as an entree or main course recipe.

Serves 5; as an accompaniment to a main course;

Ingredients;

**please note the ratio of potatoes to zuchinni can vary; and is dependent on your preference and availability of ingredients;

3-4 Medium sized Potatoes

2-3 medium Zucchinni

1 medium Onion

2  large cloves of garlic

1 small bunch of flat leaf parsley

1/4 cup of olive oil

salt/pepper

Preparation;

Peel the potatoes;

Peel the garlic slice finely;

Slice the onion;

finely chop the parsley

chop the potatoes into half slices about 5cm thick;

Chop the zucchini into half slices around 5cm thick

 

Cooking;

place a large 30cm fry pan over medium heat;

add the potatoes, to the frypan;

Season with salt & pepper (optional Chilli);

cook over medium heat for around 5 minutes; turning every few minutes to ensure that the potatoes cook and color evenly;

add the onion, garlic, zuchinni and parsley to the pan with the potatoes;

cook over medium heat for another 10-15 minutes; turning every few minutes to ensure that the potatoes and zuchinni cook and color evenly;

**you could place a lid on the potatoes and zucchini to speed up the cooking process, be sure to leave the lid slightly open so the steam escapes;

check if the potatoes are cooked by Piercing with a fork or knife to make sure that they are cooked sufficiently;

once the potatoes are cooked and deep golden in color they are ready;

 

Serving;
Transfer the potatoes to a serving dish;
Enjoy as an accompaniment to a main course; such as Scallopine al Vino Bianco or Steak alla Pizzaiola
