Veal Scallopini in white wine – Scaloppine al vino bianco

Scallopini al Vino bianco is a dish which originates from the Northern Italian city of Milan. Scallopini are thin slices of meat which have been tenderized, floured and sauteed; then simmered in white wine. There are many variations of Scallopini most traditional being with white wine, Marsala or with Lemon; Scallopini are traditionally made with Veal or yearling beef, but they can also be made with chicken or pork; or for a vegetarian version with thin slices of tofu;

Inexpensive Cuts of meat can be used for scallopini; as the meat is thinly sliced and tenderized; here are some examples;

  • Veal Loin or rump
  • Yearling beef Girello roast (eye of silverside) or Beef round;
  • Chicken fillet;
  • Pork loin or rump;

Serves 5;

750 grams – 1kg Girello Roast or other meat (150-200 grams per person)

2 Cups plain flour

1/4 Cup of refined olive oil

25 grams butter

1 Cup of White wine

1 Small bunch of parsley

salt/pepper

Preparation;

Thinly slice the meat into 3-5 mm slices

cut into serving size pieces

tenderize between 2 sheets of plastic kitchen film using the flat side of meat tenderizer hammer;

 

flour the veal well and set aside;

finely chop the parsley;

 

Cooking;

add a 30cm fry pan to medium heat; add the oil and butter;

once the butter has melted; add a few pieces of the floured meat to the hot oil/butter; season with salt/pepper and saute on both sides leaving a little under cooked; remove the cooked meat slices and set aside  **Repeat the process until all the meat has been cooked;

add 1 cup of white wine to the frypan and bring to boil

add a handful of chopped parsley;

now add the veal back to the the pan;

lower the heat and allow to simmer for around 20 min until the sauce thickens

add some stock or water if the sauce drys out;

Serve with vegetable of your choice; for the photo shoot I had cooked some rosemary and garlic fried potatoes; and blanched broccoli dressed with Olive oil and garlic;

Serve straight out of the frypan or transfer into a serving dish;

Enjoy with a glass of your favorite wine;
