Simple Italian style potatoes with garlic & rosemary;

Potatoes cooked with garlic & rosemary; is a classic Italian combination adding tremendous flavour to fried or oven roasted potatoes;

Potatoes are a wonderfully versatile ingredient; especially when combined with other vegetables like garlic, onions, peppers & zucchini;  They make a delicious accompaniment to a main course;  the combinations are only limited by your imagination.

Serves 5; as an accompaniment to a main course;


5 Medium sized Potatoes

1 large sprig of fresh rosemary

2 -3 large cloves of garlic

1/4 cup of refined olive oil



Peel the potatoes;

slice the garlic cloves in half; leaving the skin on;

chop the potatoes into 2cm dice;



place a large 30cm fry pan over medium heat;

add the potatoes, garlic and rosemary to the frypan;

Season with salt & pepper (optional Chilli);

cook over medium heat for around 15-20 minutes; turning every few minutes to ensure that the potatoes cook and color evenly;

Pierce the potatoes with a fork or knife to check that they are cooked sufficiently;

once the potatoes are cooked and deep golden in color they are ready;



Transer the potatoes to a serving dish;

Enjoy as an accompaniment to meat, fish or eggs;
