Simple Italian – Pasta with Ricotta (alla ricotta);

Pasta with Ricotta is quick, simple and delicious; an all time family favorite; which can literally be prepared in the time it takes to cook the pasta; ideal for a quick lunch or dinner; It is generally served with short pasta, shells, rigatoni (as pictured) or penne; the choice is yours;


500 Grams of pasta

350-400 grams of fresh soft ricotta

50 ml Extra Virgin olive oil

Freshly grated Parmesan



Add the ricotta to a large serving bowl;


Cooking the pasta;

Add 5 liters of water to a stock pot and put over a high flame;

tip; use hot water to speed up the cooking time;

Once the pasta water is boiling;

add two table spoons of cooking salt to the boiling water;

add the pasta;

be sure to stir the pasta a few times in the first few minutes so that it doesn’t stick together or to the bottom of the pot;

Add a large ladle of cooking water from the pasta pot (l’acqua di cottura) into the bowl with the ricotta (see picture below);

mix the ricotta with the cooking water until well combined and creamy in texture;

drizzle the olive oil into the ricotta mixture;

Cook the pasta for the time recommended on the packet; taste test the pasta in the last few minutes to ensure you don’t overcook the pasta;

drain the pasta into a colander;

add the pasta to the serving bowl, and mix well with the ricotta mixture;


serve straight out of the serving dish;

Add freshly grated Parmesan and if you like some freshly ground black pepper;

Buon Apetito;
