The classic dish of potatoes with peppers “Peperonata con patate”, is one of my all time favorites, especially when served with fried eggs; It is an example of simple Italian family cooking, which can be served as an accompaniment to grilled meats, sausages or eggs; there are many variations of the Classic “Peperonata”, it can be made with or without potatoes, or with tomatoes added; the recipe for the same dish may vary due to regional, local and family influences and/or preferences; including what ingredients are available at the time.
As you can see in the photo’s above and below, the way you cut the ingredients can certainly make a difference to the texture and taste; also by using mixed colored peppers and/or red onions you can vary the presentation and flavour of the dish.
Recipe for 4-5 as a side dish;
1 large Onion,
1 large clove garlic
4 medium Peppers (capsicum),
3 medium potatoes
1/4 cup olive oil
pinch of dry oregano
pinch of salt/pepper
Optional: (Hot Chili)
peel the onion;
peel the garlic;
peel the potatoes;
Chop the potatoes and peppers into either large dice or wedges “you decide”;
Slice the Onions, (chili) and garlic;
Using a large deep fry pan 30cm
coat the bottom of the frypan with olive oil
add to medium heat
add the potatoes and cook them for around 5 minutes till they are lightly golden;
add the (chili), onions, garlic, peppers, salt, pepper and oregano and mix with the potatoes so that the ingredients are coated in oil.
continue to cook on medium heat for the next 5-10 minutes only turning occasionaly, so that the ingredients are able to develop their flavours; add a splash of hot water if the ingredients are becoming too dry;
lower the heat and cook until the potatoes are fully cooked;
Serve with grilled meats, sausages or fried eggs the choice is yours;
