Classic Italian – Insalata Caprese;

Insalata Caprese or “The Salad of Capri” has its origins on Italy’s Isle of Capri on the Amalfi Coast; the salad is vibrant & colorful based on three ingredients fresh Mozzarella, Fresh Ripe Tomatoes and Fresh Basil Leaves. Which coincidently are also the colors of the Italian flag. It is normally served as an Antipasto or light lunch, also the combination of ingredients make a delicious filling for an Italian Style Roll “Pannino”.

The key to a successful Insalata Caprese is the quality of the Fresh Mozzarella for which you can use Cows Milk  “Fior di Latte” or Buffalo Milk “Mozzarella di Bufula” which are generally available at Italian Food Stores and select supermarkets; the quality and Ripeness of the tomatoes and thirdly the quality of the Extra Virgin Olive oil;

Recipe for 4;


  • 500 grams Fresh Mozzarella – Whole “Fior di latte”, Medium “Bocconcini” or Small “Milk Cherries”
  • 3-4  Large Ripe Tomatoes
  • 1 Small Bunch Fresh Basil
  • A Pinch sea salt
  • A splash of Extra virgin olive oil

Preparation for a Classic Caprese;

  • Slice the Mozzarella
  • Slice the tomatoes
  • Lay alternating slices of Mozzarella & Tomatoes placing a Fresh basil leaf between each;
  • Sprinkle with sea salt to taste: Optional; freshly ground black pepper
  • Drizzle with Extra Virgin Olive Oil
