Simple Tuscan Style Chicken;

This Simple Tuscan Style chicken recipe is a simple no fuss recipe which can be prepared, cooked and ready to serve in less than 60 minutes;  for this preparation I have used Chicken breast; alternatively you could use chicken pieces on the bone which would require a longer cooking time in the oven of at least 50-60 minutes. During the spring/summer season I like to cook this style of chicken on the bbq using a whole butterflied chicken; cooked skin side down on an open flame under the heavy weight of a brick to keep the chicken flat and the skin crispy ( Pollo al Mattone);

best served with simple green garden salad and pan fried potatoes for a simple Tuscan style lunch or dinner;

Serves 5;

Ingredients;

5 Chicken breast fillets with skin on

Fresh Rosemary

Dry or fresh chilli

2 cloves garlic

salt/pepper

1/4 – 1/2 cup of Olive Oil for frying

Optional Ingredients;

5 medium potatoes

For Simple Salad (Lettuce, Salad Onion, Extra Virgin Oil, White Wine Vinegar, Salt)

Preparation;

Coarsely chop the garlic;

place chicken breasts in a large tray skin side up;

season with salt, pepper, chili, garlic & rosemary (see picture below);

drizzle with extra virgin olive oil be generous;

for this preparation you could prepare your chicken in advance and leave to marinate for a couple of hours in the fridge, however this step is optional, the chicken can be cooked immediately especially if you time limited;

Turn your oven on high 200c; fan forced 190c to pre-heat;

Cooking;

add the olive oil to a 30cm fry pan and put over high heat;

add the chicken to the hot oil skin side down; cook till the chicken has well browned;

turn the chicken and cook for a further 5 minutes on high heat;

browning and sealing both sides of the chicken (set the oil in the pan aside to cook the optional potatoes);

line a medium size baking tray with baking paper;

transfer the cooked chicken to a baking tray; skin side up;

put the baking tray in middle of the oven;

cook for around 25-30 minutes;

tip;

In the meantime prepare some pan fried potatoes and a simple lettuce salad;

potato cooking tip;

peel and chop the potatoes into wedges; put the potatoes in a

saucepan and cover with cold water; bring to boil; cook for 5 minutes;

drain the potatoes; heat the oil in the fry pan where you cooked the chicken to medium heat; add the well drained potatoes to the hot oil, cook turning often till they are well browned and cooked through.

Serving;

When the chicken is cooked remove from the oven and slice on a chopping board  (as shown below); Serve with pan fried potatoes, salad and of course your favorite glass of wine;
