Simple Pasta with Broccoli;

Pasta with Broccoli is another one of those simple quick and easy to prepare pasta recipes; which are based on a single ingredient; made super tasty by the addition of pantry staples such as garlic, hot chili and Extra Virgin Olive Oil; for this preparation  I used Orechiette but any short pasta such as Penne or Spirals would be suitable; for a vegetarian version simply exclude the pancetta;

Serves 5;

Ingredients;

500 grams pasta

1/4 cup extra virgin olive oil

2 heads of broccoli

1 Large clove of garlic

100 grams of chopped Pancetta

1 fresh hot chili pepper (or dried chili flakes)

1 cup of grated Parmesan or Pecorino cheese

salt/pepper

Preparation;

finely chop the garlic and the hot chili pepper;

divide the broccoli into small flowers;

Cooking the pasta;
Add 5 liters of water to a stock pot and put over a high flame;
tip; use hot water to speed up the cooking time;

Cooking;

add the extra virgin olive oil to the fry pan over medium heat;

add the garlic, pancetta and hot chili pepper to the hot oil;

cook the ingredients until lightly golden color (be careful not to burn the garlic);

now turn off the frypan whilst waiting for the pasta to cook;

Once the pasta water is boiling;

add two table spoons of cooking salt to the boiling water;

now add the pasta;

be sure to stir the pasta a few times in the first few minutes so that it doesn’t stick together or to the bottom of the pot;

Cook for the time recommended on the packet; 

**add the broccoli to the pasta pot and cook with the pasta for the last 3-5 minutes of cooking; depending on how tender you prefer the broccoli cooked;

taste test the pasta in the last few minutes to ensure you don’t overlook the pasta;

drain the pasta into a colander;

now turn on the frypan with the garlic and chili to high heat;

add the pasta to the ingredients in the fry pan and stir through;

Serving;
serve straight out of the fry pan or add to a serving dish;

Serve with freshly grated Parmesan or Pecorino and of course a glass of your favourite wine;
