3 Simple Crostini;

Crostini are the perfect accompaniment to your Pre-Dinner drinks or Aperitivo; they are a classic Italian finger food, easy to prepare, with combinations only limited by your imagination . The three crostini I have chosen for this post, are simple and easy to prepare using readily available ingredients;

3 simple crostini;

  • Gorgonzola & Pear Crostini (al Gorgonzola e Pere);
  • Smoked salmon and fresh Mozzarella Crostini ( al salmone affumicato e mozzarella);
  • Proscuitto & Fresh Mozzarella Crostini (al Proscuitto e mozzarella);

Serves 6;

Makes 18 crostini;


1 thin rustic Bread stick;

50g of slices smoked salmon

3 thin slices of Italian Proscuitto

100g of Italian Gorgonzola

1 small medium ripe pear (variety depends on seasonal availability)

1 Buffalo mozzarella or Fior di latte mozzarella (depends what is available in your neighbourhood deli or supermarket);

extra virgin olive oil

Black Pepper grinder

take the mozzarella and Gorgonzola out of the fridge at least 30 minutes before and leave out to bring to room temperature;

Pre-heat your oven to 180C;

Slice the bread stick into at least 18 x 1cm slices

line a shallow tray with baking paper; and add the bread slices;

drizzle the bread with extra virgin olive oil;

place in the oven for 5 minutes to crisp the bread; remove from the oven and set aside when ready;

Slice the fresh mozzarella into thin slices (5mm) slices, then slice in half across the width to fit the crostini bread;

Assembling the crostini;

add a slice of mozzarella to 12 of the crostini;

generously spread the remaining crostini (6) with the Gorgonzola;

cut the slices of Proscuitto in half and curl into a size that will fit on the crostini bread; add the Proscuitto to 6 crostini (see picture below);

slice the smoked salmon into 2cm slices and curl into a size that will fit on the crostini bread; add the curled salmon to the 6 pieces of crostini bread (see picture below);

Slice the Pear in half and the finely slice it alone its length, placing a slice on each of the Gorgonzola crostini (see picture below);

lightly season the crostini with cracked pepper and a drizzle of extra virgin olive;

to serve place on a serving plate or wooden board; and of course with your favourite Aperitivo;
