Simple pasta – Spaghetti with Tuna and tomato (al tonno);


Having a selection of Simple Pasta recipes in your repertoire; can really make a difference especially on those days when you havent been able to plan ahead; Spaghetti al Tonno certainly fits the “Simple Pasta” category. It also helps to always keep a good supply of the basic staples in your pantry for those occasions; such as Canned Tuna chunks, diced or crushed tomatoes and at the very least a few packets of quality Italian Spaghetti (Barilla N.3 or N.5).


500 grams of Spaghettini or Spaghetti;

500 grams of canned Italian diced tomatoes;

1/4 Cup extra virgin olive oil;

200g Tuna chunks in olive oil

a handful of Italian parsley

1 small onion

1 large clove of garlic

hot chilli either fresh or flakes


Peel the onion and garlic;

Slice the onion;

slice the garlic;

Slice the chilli;

Chop the parsley;


Add 5 liters of water to a stock pot and put over a high flame before you start making the pasta sauce; use hot water to speed up the cooking time;


using a 30cm deep fry pan, add the extra virgin olive oil to the pan and heat moderately;

add the Onion, garlic, chopped parsley and chilli to the fry-pan;

gently fry the ingredients to release their aroma on medium heat, be careful not to burn the garlic;

add the Diced tomatoes to the fry-pan, season with salt and pepper;

bring the diced tomatoes to boil, lower to a simmer cook for another 5 min;

Open the can of tuna and drain off any excess oil;

Add the tuna to the tomato sauce, in big chunks using a fork;

cover the tuna sauce with a lid and leave to simmer slowly whilst waiting for the pasta to cook;

in the meantime if the pasta water is boiling;

add two table spoons of cooking salt to the boiling water;

add the pasta;

be sure to stir the pasta a few times in the first few minutes so that it doesn’t stick together or to the bottom of the pot;

Cook for the time recommended on the packet; taste test the pasta in the last few minutes to ensure you don’t overcook the pasta;

drain the pasta in a colander and then add to the fry pan with the sauce;

stir the pasta through the sauce;


transfer to a serving dish or serve straight out of the fry pan;

Enjoy with a glass of your favourite wine;
