Simple pasta – Spaghetti with prawns and tomato (con gamberi e pomodoro);


Pasta is an excellent choice for a quick family meal, especially when you have limited time and/or budget to spare; having a few simple pasta recipes in your repertoire can certainly make your busy life easier to manage. Pasta with prawns is one of my wife’s all time favorites; Please Enjoy;



500 grams of spaghetti, spaghettini or linguini;

1 large clove of garlic

1 large sprig of continental parsley

A pinch of chilli flakes or 1 fresh red chilli pepper

250 grams medium size uncooked peeled prawns with or without tails;

1/4 cup of extra virgin olive oil

400 grams of chopped fresh ripe tomatoes or a can of diced Italian tomatoes



you could use frozen or fresh prawns for this recipe, be sure to remove any excess water before cooking by using some kitchen paper towel.

Optional Ingredients;

1/2 cup of black olives;


dry the prawns with some kitchen paper towel before cooking to ensure that there is no excess water released when frying the prawns;

crush or finely chop the garlic;

finely chop the parsley;

finely chop the red chilli pepper if you are using fresh;


Add 5 liters of water to a stock pot and put over a high flame before you start making the pasta sauce;

use hot water to speed up the cooking time;


using a 30cm deep fry pan, add the extra virgin olive oil to the pan and heat moderately;

add the garlic, parsley and chilli to the frypan;

gently fry the ingredients to release their aroma on medium heat, be careful not to burn the garlic;

add the prawns to the frypan, season with salt and pepper;

fry the prawns on high heat till they are firm and cooked through (about 3 min);

add the diced tomatoes and bring to boil, lower to a simmer cook for another 5 min;

in the meantime if the pasta water is boiling;

add two table spoons of cooking salt to the boiling water;

add the pasta;

be sure to stir the pasta a few times in the first few minutes so that it doesn’t stick together or to the bottom of the pot;

Cook for the time recommended on the packet; taste test the pasta in the last few minutes to ensure you don’t overcook the pasta;

drain the pasta in a colander and then add to the fry pan with the sauce;

stir the pasta through the sauce;


transfer to a serving dish or serve straight out of the fry pan;

Enjoy with a glass of your favourite wine;
